The method determines the concentration of the chemicals that can afford to use in clean non-porous food contact surfaces, which must be 2 to 4 times the concentration found. The test also determines the maximum hardness that can have the water to the concentrations found disinfectant. As control product used tolerance results water hardness C14-Alkyl dimethyl benzyl ammonium chloride (C14-chloride dimethyl benzyl ammonium) 700 and 900 ppm (mg / mL) and pure, and C16-Alkyl dimethyl benzyl ammonium chloride (C16-dimethyl-benzyl chloride-ammonium chloride cetalkonium -chloride of cetalkonio) with 400 and 500 ppm (mg/mL) hardness expressed as CaCO3. The method can be performed with Escherichia coli ATCC 11229 or Staphylococcus aureus ATCC 6538 and must demonstrate a 99.999% reduction in 30 seconds of the test control that must be between 75 and 125 × 106/mL for validation of the test.
